What makes extra virgin olive oil so special?
It is all a question of its physical and chemical properties, in particular those of the so-called minor compounds, a small fraction of substances that are the secondary products of plant and fruit metabolism. The discovery and understanding of the value of these compounds has let to a considerable increase in extra virgin olive oil consumption, even in non-producing countries.
It is the quality of its fatty acids and wealth of anti-oxidants that make the highly-prized extra-virgin olive oil nutritionally valuable in addition to providing its full body, fragrance and preservability.
The most distinctive feature of the product is that it comes from the fruit and not from the seed. Nature has provided the fruit with a series of compounds capable of defending it against external agents. Not only that but the substances turn out to be useful later down the line, giving longer life to the extra virgin olive oil and, still later, producing biological and physiological actions that are of direct benefit to those who use it as food.
